Beef Kofta in Tomato Sauce

Ingredients:

  • Angus Ground Beef 80/20 1kg
  • Tomato Paste 800g
  • Garlic Powder 500g
  • Basmati Rice 10Kg
  • Olive Oil 4L

Instructions:

Spiced beef koftas simmered in a rich tomato sauce and served over basmati rice. The 80/20 mince matters here: leaner beef gives a drier kofta.

Method

  1. Season the ground beef well, add a teaspoon of garlic powder, and work it briefly with your hands until it just holds together. Overworking makes it tough.
  2. Roll into 16 koftas, roughly the size of a walnut.
  3. Brown them in a little olive oil over a medium-high heat, turning until coloured all over. Lift out and set aside.
  4. In the same pan, stir the tomato paste with another pinch of garlic powder and cook for a minute to take the raw edge off.
  5. Add a cup of water, bring to a simmer, and return the koftas to the pan.
  6. Cover and simmer gently for 20 minutes, until the sauce has thickened and the koftas are cooked through.
  7. Rinse and simmer the basmati for 12 minutes. Serve the koftas over the rice with plenty of sauce.
